1. Preheat oven to 375.
2. Line a baking sheet with parchment; lightly coat with spray. Set aside.
3. Heat oil in a medium nonstick over medium-high heat.
4. Add spinach, 1 pinch onion powder, 1 pinch salt, and 1 pinch pepper; cook stirring occasionally, for 1-2 minutes, or until spinach just wilts. Remove to a plate; set aside.
5. Separate egg whites into a large mixing bowl; set yolks aside. Add vinegar, remaining 1 pinch onion, and remaining 1 pinch pepper to egg whites; beat until soft peaks form.
6. Spoon egg whites into two separate mounds on the prepared sheet; use the back of a spoon to form a divot in the center of each mound. Bake for 5 minutes.
7. Remove egg whites from the oven; divide spinach evenly between divots. Top each with an egg yolk.
8. Bake for an additional 5 minutes, or until yolks are heated through but still runny.
